coq au vin Christophe, 22/02/202422/02/2024 Coq au Vin Ingredients: – 1 kg chicken pieces (thighs and drumsticks) – 200g bacon, diced – 200g pearl onions – 200g carrots, sliced – 200g mushrooms, sliced – 4 cloves of garlic, minced – 750ml red wine – 500ml chicken broth – 2 tbsp tomato paste – 2 tbsp flour – 2 tbsp butter – Salt and pepper to taste – Fresh parsley for garnish Instructions: 1. In a large Dutch oven, cook the bacon over medium heat until crispy. Remove the bacon and set aside, leaving the bacon fat in the pot. 2. Season the chicken pieces with salt and pepper, then brown them in the bacon fat on all sides. Remove the chicken and set aside. 3. Add the onions, carrots, and mushrooms to the pot and cook until softened, about 5 minutes. Add the garlic and cook for another minute. 4. Sprinkle the flour over the vegetables and stir to coat. Cook for 1-2 minutes. 5. Pour in the red wine and chicken broth, stirring to combine. Add the tomato paste and return the chicken and bacon to the pot. 6. Bring the mixture to a simmer, then cover and cook over low heat for 1-1.5 hours, or until the chicken is cooked through and tender. 7. Remove the chicken pieces from the pot and keep warm. Increase the heat to medium-high and simmer the sauce until thickened. 8. Stir in the butter until melted and season with salt and pepper to taste. 9.
